Breakfast Apple Rice

Preparation time: 10 minutes (need cooked rice)
Cooking time: 45 minutes oven, 10 minutes microwave

2 cups cooked brown rice
1 apple, cord and chopped
1/3 cup apple juice
¼ cup pure maple syrup
2 teaspoons fresh lemon juice
1 teaspoon vanilla extract
½ teaspoon ground cinnamon

Preheat the oven to 350°F. Combine all the ingredients in a casserole dish with a cover. Bake in a conventional oven for 45 minutes or in the microwave oven for 10 minutes at full power, stirring once halfway through the cooking time. Serve hot.
