Red Lentil Soup

1 x onion
2 x garlic cloves
1 tsp cumin
1 tsp coriander
1/2 tsp turmeric
1/2 tsp chilli
1 x carrot
200g red lentils
4 tomatoes/1 tin chopped tomatoes
1L vegetable stock

Sweet Potato and Chickpea Salad

2 x sweet potato
1 tin chickpeas
1 tsp cumin
1 tsp chilli
1 tsp paprika
Salt and pepper
Olive oil

Pumpkin seeds

Dressing //

2 tbsp tahini
Juice of a lemon
1 tbsp maple syrup
1 tbsp ot water

Aubergine and Edamame Soba Noodles

200g soba noodles
1 cup edamame beans
1 aubergine

Sauce //

1 tbsp sesame oil
2 cloves of garlic
Thumb of ginger
2 tbsp tamari
1 tbsp miso paste
2 tbsp brown sugar
1 tbsp apple cider vinegar
Juice of 1 lime
2 tbsp water
