Keto casserole

Cook the bacon crisp first.

I buy the rotisserie chicken from Costco and I use some of the dark meat too. Cut the chicken off the bone in cubes and pieces.

Line the bottom of a casserole pan or dish with broccoli – I pack it as the broccoli will cook down. I use fresh or Costco bagged broccoli.

If you add onions like I do sauté them lightly in the bacon grease – remember that fat is your friend. Then spread them over the broccoli.

In a large sauce pan combine: cream, butter, cream cheese, ranch seasoning packet, and chicken broth – heat on low until cheese is melted- stir in chicken and half the bacon crumbled up. Spread over broccoli in casserole dish.

Spread on topping – bake 1 hr at 350 covered- broil to melt cheese topping uncovered.

I cook to taste and what looks right so I don’t measure the cheese.

3 cups cooked chicken breast and/or leg and thigh meat
2 tablespoons butter
½ packet of ranch seasoning mix
4 oz cream cheese
½ cup heavy whipping cream
2 heads broccoli
⅔ cup chicken broth
1 cup crumbled bacon
1 cup grated cheddar cheese
2 onions diced or sliced (optional)
