Mediterranean Diet Recipes – Mediterranean Salad Recipe
1 – medium cos lettuce, 1-inch square
3 – small tomatoes, wedges
1 – medium cucumber, half moon
6 – small radishes, sliced thin rings
1 – green pepper, halved, sliced
1 – green chili, sliced thin
3 leaves – iceberg lettuce, shredded
½ cup – fresh parsley, chopped
4 tbsp – virgin olive oil
4 tbsp – fresh lemon juice
¼ tsp – yellow asafoetida powder
1 tsp – fine salt
½ tsp – freshly ground black pepper
1 tsp – dried mint leaves

1. Combine lemon juice, asafoetida, salt, black pepper and mint in a small bowl, whisk to blend slowly add olive oil.
2. Set the dressing aside.
3. Toss lettuce, tomatoes, cucumber, radishes, pepper, chili, lettuce and parsley in a large bowl. Mix well.
4. Pour the dressing over the salad when ready to serve and toss gently to coat. Serve immediately.
